Vegetable Paella

Paella is a Spanish rice dish more appropriately a Valencian recipe. This is a nutritious and delicious vegetable rice made in different combinations of vegetables based on the availability in the region. Less spicy food lovers should like this.

We can achieve our recipe in two steps. First shallow fry all vegetables and then cook rice with spices.


Preparation

  1. Mince onions and cut vegetables to small cubes
  2. Prepare vegetable stock by cooking vegetables like carrot, mushroom, capsicum, onion, minced garlic, thyme and bay leaf for about 30 minutes . You may use ready to use stock
  3. Keep ready some white wine, black olives and cherry tomato

Shallow Fry

  1. To a hot pan add some oil and fry onion until translucent
  2. Add yellow and green Zucchini and sort for few minutes until tender
  3. Add red, green, yellow capsicum (bell pepper) and continue to sort for sometime
  4. Add carrot, olives and stir for 3-4 minutes
Keep this aside and move to the next step in preparing the rice




As our Vegetable is ready, let us now prepare the rice.


Preparation

  1. Keep ready the chilly flakes, smoked paprika, Safron, vegetable stock and minced garlic
  2. Also Keep ready some white wine, black olives, crushed pepper and cherry tomato
  3. To a hot pan add some oil and fry minced garlic for some time.
  4. Add rice to this, smoked paprika, chilly flake powder, saffron and stir it for couple of minutes
  5. To cooker pan add this rice and then the shallow fried vegetables
  6. Add white wine, crushed pepper, vegetable stock , top with some salt and steam until rice is cooked
  7. Once the rice is cooked, top it with oil and cherry tomato's

Your rice is ready to serve. Best served with some salads and Greek style flavored yogurt. Be rest assured everyone will love this rice dish. So try this today!
