Mutton Rice (Erachi Choru)

Mutton rice or Erachi choru is a South Indian delicacy made of meat and spices. The aroma and lip-smacking taste will make this a favourite choice of many.

We can achieve our recipe in three steps. First marinate the meat, then prepare masala(spice mix) and then flavoured rice 


Marination

  1. Slice and Clean the Meat to required level
  2. Add turmeric powder, Chilly powder, Coriander powder and Salt and mix well
  3. Add a spoon of oil and mix till the meat is covered with spice. Leave it for 30 minutes

Keep this aside and move to the next step in preparing the masala mix!





As our meat gets marinated, let us prepare the masala or spice mix.


Mutton Masala Ingredients

  1. Keep ready the masala ingredients Cinnamon, cardamom, cloves, chopped onions, tomatoes, coriander leaves, lemon juice,
  2. Prepare ginger, garlic and green chilly paste
  3. Ghee to roast (You may use oil of your choice)

Preparation

  1. To a hot pan(cooker) add ghee and fry cinnamon, cloves and cardamom.
  2. Add chopped onion to this and fry until light brown
  3. Add ginger, garlic and green chilly paste, stir for a minute or two
  4. Add marinated meat into this and mix well until meat is covered with paste
  5. Add tomato's and stir till it becomes soft
  6. Add coriander leaves and mix it for a minute
  7. Add lemon juice and stir it well
  8. Now allow the meat to pressure cook until about 3 whistles or until the meat is soft if you choose to cook in pan

Your masala is now ready and ready to mix with cooked flavoured rice. Watch the next slide for preparation of rice and final mix!

Flavoured rice Ingredients

  1. Keep ready cinnamon, cloves, cardamom and chopped onion
  2. Wash and keep rice ready
  3. Keep ready handful coriander and mint leaves

Rice preparation & final mix

  1. To a hot pan add ghee and then the spices - Cloves, cinnamon and cardamom
  2. After a minute add chopped onion and fry till it turns light brown
  3. At this stage add rice at this stage and mix well
  4. Now add this rice to the cooker pan. Add some ghee to avoid rice become sticky when cooked.
  5. Add mint and coriander leaves. Sprinkle some salt 
  6. Add water as required to cook the rice and allow the rice to cook
  7. Once the rice is cooked, its time to add the meat masala mix which is already ready
  8. Mix well till the rice is completely blended with masala

Your Mutton rice or Erachi choru is now ready to serve!
