Welcome to the preparation of Kothu Chicken a Tamil Nadu style dry chicken recipe.
Prepare the ingredients as per your need from the list and follow the three phases starting with this phase
- Roast half of the masala mix in a pan until its light brown.
- Now to the chicken (preferably breast or boneless) add crushed ginger, garlic , chopped chilly and salt
- Add the roasted masala to this and marinate the chicken
- Leave it refrigerated for about 1 hr
- To a pan add the marinated chicken, sufficient water and boil it
- Cook the chicken covered for about 15 to 20 minutes
- Keep checking if the chicken is cooked and add water if it dries
- Cool the cooked chicken and shred the chicken with your hand.
- Ensure the bones are separated, if any.
Now integrate all your ingredients.
- Heat a frying pan and add oil as needed
- Once the oil is hot add mustard seeds, as it blisters add red chilly and curry leaves
- Add chopped coconut, onion, shallots and some salt. Roast it till pale brown
- Add oil if it dries up and mix the balance part of the masala mix and stir it for few minutes
- Add the shredded chicken to this and mix well
- Add Vinegar and pepper to this. Add salt if necessary
- Sprinkle water to make it moist and leave it covered in low flame for few minutes
- Your Kothu chicken is now ready to be transferred to a bowl
